Protein Bars/Loaf

by Ken

This is a great option for an on-the-go meal replacement:

2 cups oats
4 whole omega-3 eggs
4 scoops whey protein isolate (I used PVL's IsoGold Raspberry, 35 g per scoop)
2 tsp vanilla extract
cinnamon to taste

- Microwave 1/2 of the oats with less than 1 cup of water so the mixture is very thick

- Crack the four eggs over the mixture, add the protein powder, the rest of the oats, vanilla and cinnamon

- Stir until everything is well combined

- Spray a 9x9 baking pan with non-stick spray, pour batter in pan

- Cook at 350 degrees for 15-20 minutes, or until the mixture is firm

- Remove from the oven, let cool for a minute and divide into bars. For future use, keep the bars frozen in tinfoil.
