Laree's Fit and Lean Meatloaf from Stella's Kitchen cookbook.
1LB 96% lean ground beef
1/4 cup diced yellow onion
1/2 large green pepper, diced
2 egg whites
1/4 cup oatmeal
1/2 teaspoon garlic powder
8oz reduced sodium tomato sauce
Pre-heat oven to 350 degrees. Mix all ingredients in a large bowl, but only use HALF the tomato sauce in the mix.
I find it easiest to just wash hands and mesh it all together with the fingers.
Put in an 8x8 square baking dish or bread loaf pan sprayed with nonstick cooking spray. Top loaf with remaining 4oz of tomato sauce and bake for approximately 50 minutes. Makes 4 large slices.
